Lentil Soup
Lentil soup from Marsha
Ingredients
- 1/2 lb dry lentils
- 2 tsp minced garlic
- 1/2 tsp dried thyme
- 4 carrots
- 1 onion
- 2 stalks
- Some potatoes (sweet or white)
- 4 cups vegetable broth
- 1 tsp salt
- 1/2 tsp pepper
Directions
- Dump all of the following in a slow cooker on low before you leave for work in the morning
- (All veggies cut to bite size…I just eyeball the amount. The broth should just barely cover the top of the ingredients in the crockpot)
- Should be ready when you get home…make sure potatoes are tender.
